Head to the 'Egg Wave' quest location at 38.8, 58.6 in Mount Hyjal to begin the jousting quest chain.
Complete the Egg Wave Quest
Finish the 'Egg Wave' quest at 38.8, 58.6 in Mount Hyjal — at the end, you must choose between the Gold Mini Jouster and the Blue Mini Jouster, so pick carefully since you can only select one reward per character.
Get Both Jousters
To obtain both the Gold Mini Jouster and the 
Blue Mini Jouster, complete the 'Egg Wave' quest on a second character, as the quest reward allows only one choice per playthrough. It is also possible to earn both pets by completing 'The Unbeatable? Pterodactyl: BEATEN' achievement.
Tips
Gold Mini Jouster is Breed 8, while the Blue Mini Jouster is Breed 12 — factor this into your pet battle team planning.
The jousting plushie rider on the Gold Mini Jouster can detach during pet battles and visibly bob up and down in the middle of the battlefield — this is a display quirk, not a bug affecting gameplay.
